After the work executed throughout the whole year, giving guidance and accompanying the growth of each plant, there comes the time for harvesting.
The job goes on in the Oak Barrels Room where the enologist tracks the wine evolution and maturity in every barrel personally. There, wine ages and evolves in touch with the wood that highlights its qualities, adding complexity and elegance.
Subsequently, wine is bottled and stored in our Maturity Cellar, located 30 feet below the Winery. In this dark and silent place, the wine rests and strikes balance before reaching consumers. In this way, by combining traditional and hand-craft techniques with top-notch technology, the tasks carried out in the Oak Barrels Room as well as those in the Maturity Cellar help reveal and maximize the particular feature each wine acquired from its birth, in the vineyard. |
